This recipe is so yummy and it’s great to make on the weekend and have as a snack throughout the week. If you have a big family it’s the perfect, everyone loves eggs, sausage and cheese. What’s not to like? It’s quick and easy. Don’t be intimidated by the technique, it’s simple. 

Ingredients:

  • 2 yukon gold potatoes peeled and cooked in microwave for 4 min, then peeled and sliced thin
  • 1/4 large yellow onion diced
  • 1 andouille or spicy sausage link out of the casing
  • 4 eggs
  • 1 yolk mixed until frothy
  • 1/8 cup half and half or milk 
  • 1/2 approximately of olive oil 



Directions:

  • 1. brown sausage until caramelized
  • 2. remove and set aside onto a plate
  • 3. add more olive oil and sauté onion
  • 4. remove onion and add to reserved plate
  • 5. slice potatoes thin
  • 6. arrange potatoes in bottom of pan on med low heat, let sauté for 5 minutes 7. add back onions and sausage
  • 8. mix eggs until frothy and add half and half or milk
  • 9. add cheese to egg mixture
  • 10. top egg mixture on pan
  • 11. cover cook for about 8 minutes on stovetop on medium heat
  • 12. boil on high on middle rack for approximately 4 minutes or until the top starts to brown
  • 13. fold out onto plate
  • 14. finish with parsley
