Super delish recipe to impress friends, a loved one or make quickly during the week. It’s light healthy and satisfying. I serve it with an arugula salad. If you need a more filling meal add some rice.

Ingredients:

4 Petrale Sole fillets
!/2 teaspoon salt and pepper
4 Tablespoons flour or (GF flour)
2 Tablespoon Ghee (I love this stuff its butter without the mild solids which gives you the ability to cook on high temps with the flavor of the butter, it’s a chef secret. I never cook without it.)
2 Tablespoon olive oi
1/2 cup white wine (I like sauvignon blanc) 3 tablespoons butter
Juice of 1/2 a lemon
3 tablespoons butter
Salt and pepper to taste
3 tablespoons chopped parsley

Directions:

1.Dry fish with paper towels
2. Mix flour with a pinch of salt and pepper
3. Sprinkle 1/2 teaspoon of salt and pepper on each fillet on both sides
4. Dredge lightly with flour
5. Heat large sauté pan on med heat for
6. After one minute add 1 tablespoon ghee and 1 tablespoon olive oil, when simmering add two pieces of fish and sauté 2 minutes per side, remove and add to side plate. Add remaining ghee and olive oil and repeat with addition two pieces of fish and add to plate
7. While pan is still hot deglaze with wine, cook down for 3 minutes add lemon and reduce for another 2 minutes.
8. 
Add butter and stir into sauce, taste for salt and pepper
9. Add parsley and enjoy.
