This is the best recipe ever for Caesar. I have tested lots of them and without a doubt this is the winner. You can also use it as a spread for wraps and sandwiches to change things up. Also a great dip for veggies. Something fun to do on you usual Caesar salad, is to paint each romaine leaf with the dressing and add the ingredients in layers. It’s a beautiful presentation and your friends and family will think you are super cool in the kitchen.

Ingredients:

 

  • 5 anchovy fillets
  • 1/2 teaspoon salt
  • 3 cloves chopped garlic
  • 1 egg yolk
  • 1 tablespoon dijon mustard 1/2 cup olive oil
  • 1 lemon juiced or to taste 1/4 cup parmesan grated 1/4 teaspoon pepper

 

Directions:

  • 1. Add anchovies, salt and garlic to a blender and blend for 30 seconds until a paste is formed. 
  • 2. Add egg yolk and blend 10 seconds
  • 3. Add Dijon and stream in oil very slowly while blender is running, until mixture becomes thick
  • 4. Add lemon juice (add a little at a time and taste to get the perfect flavor), parmesan and pepper and blend another 10 seconds
 

 

If the mixture is too thick add a few tablespoons of water and blend
This dressing will set up over night and become thick so I like to add the water as I use the dressing, add consciously avoiding making it to thin.
