Brandy, Mustard and Green Peppercorn Sauce

 

 

This sauce is great for meat dishes but can also be served with chicken.  It packs tons of flavor with very little work or a long ingredient list.  You will make this a go to and it seriously impresses people at a dinner party.

 

Ingredients:

 

2 to 4 Beef fillet steaks or other protien you like

 

1/3 cup Brandy 

1 Shallot Chopped 

2 tablespoons green peppercorn in brine

1/2 teaspoon fresh ground pepper 

 

1 cup low sodium organic beef stock  

 

2 tablespoons dijion mustard

1/2 cup heavy cream

 

Salt and Pepper

 

Directions:

 

 

  1. Heat pan on high heat
  2. Add canola oil and sear meat for about 2 minutes per side, remove and keep covered on a plate 
  3. Heat same pan to medium high, add brandy and reduce to 1/2 the liquid on medium, this will take about 5 minutes
  4. Add shallot, pepper and peppercorns and cook another 2 minutes
  5. Add beef stock and reduce for 5 minutes
  6. Whisk in Dijon and cream and cook another 3-5 minutes or until sauce is reduced by half and thick
  7. Taste for salt and add if necessary
